1 grated carrot
1 egg
2 tbsp oats
Salt and herbs to taste

Preheat oven to 180°C (350°F). Line a baking tray with parchment.
Grate 1 medium carrot finely, then squeeze in a towel to remove excess moisture (but leave some moisture for binding).
In a bowl combine grated carrot, 1 egg, 2 tbsp rolled oats, 1–2 tbsp finely chopped onion or green onion, 1–2 tbsp grated cheese (optional), salt, pepper, and herbs (parsley or dill). Mix until combined.
Let mixture rest 5–10 minutes so oats absorb liquid and mixture firms up. If too wet, add another tbsp oats or a tablespoon of flour/ground oats.
Shape into small balls or patties (about 1 tbsp each) and place onto the prepared tray. Flatten slightly.
Brush lightly with oil or spray. Bake 18–22 minutes, turning once halfway, until golden and firm.
Cool 5 minutes on a rack before serving.
Serving ideas: dip in yogurt-herb sauce or hummus.
Storage: Refrigerate up to 4 days, freeze up to 2 months. Reheat in oven for crispiness.
